Healthy, quick to cook and versatile, asparagus is one of the easiest vegetables to incorporate into your kitchen repertoire
Asparagus with garlic & sesame
2 tbsp sesame oil
1 tbsp unsalted butter
2 large garlic cloves crushed
3 bunches Aspari asparagus, ends trimmed
Sea salt to taste
Sesame seeds, lightly toasted
- Combine sesame oil and butter in the same pan and when heated, add garlic and onion and fry gently until softened.
- Add asparagus spears and stir-fry until bright green and tender.
- Add the toasted sesame seeds and salt to taste.
Spiced BBQ Asparagus
1/3 cup olive oil
1 tbsp balsamic vinegar
1 tsp ground cumin
1 tsp ground coriander
1 garlic clove, crushed
Salt and pepper
2 bunches Aspari asparagus, ends trimmed
- Combine oil, balsamic vinegar, cumin, coriander, garlic and salt and pepper in a screw-top jar. Shake well to combine.
- Place asparagus in a single layer in a shallow dish.
- Pour over the dressing and turn asparagus spears to coat well.
- Preheat BBQ plate or large frying pan over high heat.
- Add asparagus and cook, turning occasionally and basting with dressing until bright green and just tender, 3 to 4 minutes.
Asparagus & Beef Stir-fry
500g lean beef, cut into strips
3 tbsp oyster sauce
1 tbsp sweet chilli sauce
1 tbsp peanut oil
3 bunches of Aspari asparagus, ends trimmed, sliced
200g mushrooms, sliced
6 spring onions, sliced thinly
3 garlic cloves, sliced
1 tsp sesame oil
Pepper to taste
- Combine beef, oyster sauce and sweet chilli sauce and marinate for 15 minutes. Drain marinade away.
- Heat peanut oil in wok or frying pan over high heat and stir-fry beef until just cooked, 2-3 minutes. Remove from pan and set aside.
- Add asparagus, mushrooms and spring onions to pan. Stir-fry until tender and crisp, or around five minutes.
- Add beef, garlic, reserved marinade, sesame oil and pepper.
- Stir-fry until heated through.
- Add asparagus and cook, turning occasionally, basting with the dressing until bright green and just tender, around 3 to 4 minutes.
Char-grilled Chicken & Asparagus
2 tbsp olive oil
2 tbsp sweet chilli sauce
2 bunches Aspari Asparagus, ends trimmed
4 lean chicken breast fillets, skin removed and trimmed
6 truss tomatoes, halved lengthways
- Combine olive oil and sweet chilli sauce in large mixing bowl.
- Add chicken fillets, asparagus and tomatoes and toss to coat with mixture.
- Cover and allow to marinate in the refrigerator for 15 minutes.
- Preheat char-grill or BBQ and heat the chicken until almost cooked through.
- Add Aspari Asparagus and tomatoes to the grill (or BBQ), cook until lightly browned and tender, or about 5 minutes.
